Autumn Pear and Radicchio Salad


1 head Radicchio

1 head Lettuce

3 Anjou Pears

1 Pomegranate

100g Gorgonzola

1/4 cup pomegranate juice

1 tablespoon rice vinegar 

2 teaspoons Dijon mustard 

1 teaspoon honey 

1/2 teaspoon lime zest 

1/2 teaspoon orange zest 

1/4 teaspoon poppy seeds 

Salt and Pepper, to taste

1/2 cup Olive Oil

Directions for Dressing:

Whisk together the pomegranate juice, vinegar, mustard, honey, lime and orange zest and poppy seeds in a bowl. Season with salt and pepper. Gradually whisk in oil until emulsified. 

Tear radicchio and lettuce into bite-sized pieces and toss together. Halve and slice pears. Toss greens and pear together and arrange on plates. Sprinkle with pomegranate. Cut gorgonzola into small pieces and divide among servings. Add dressing to taste.
