Belgian Endive

Slightly bitter, cupped leaves and a delicate crunch make the Belgian Endive perfect for salads and hor d’oeuvres. Often found in grocery stores throughout the year. Fun fact: Belgian Endive is grown out in fields over the summer, resembling dandelion. The roots are harvested in the fall, trimmed and stored before being forced in dark growing chambers. The lack of light provides a blanched leaf with only a slight hint of bitterness.
