Castelfranco Radicchio
This stunning radicchio has yellow-ish leaves with red speckling and a mildly bitter flavour. It’s ideal for fresh salads, paired with citrus, balsamic vinegar, pancetta and fennel. You are more likely to find it at Farmers Markets and in dishes at fine restaurants in fall and winter months. Fun fact: Castelfranco is also known in Italy as the Edible Flower and Orchid Lettuce.
