Found in stores and farmers markets throughout the growing season, dandelion is bitter and often sauteed with oil and balsamic vinegar. Dandelion is the most easily-sourced and economic bitter green around. Fun fact: The dandelion you find at the farmers market and in grocery stores isn’t the same as the yellow-flowered flora growing in lawns. It’s actually a cultivated chicory — and if you let it go to seed, you’ll get a stunning, purple flower!
