We aren’t going to promise that you’ll find this radicchio easily, but it should be on any foodie’s bucket list. This radicchio is grown out in the fields before the roots are harvested and then forced in dark grow chambers. The result is a head of elegant, slender leaves with stark maroon and white colouring. Growers who achieve this are truly masters of their craft.
