Escarole
Although it resembles a green-leaf lettuce, escarole has a unique, bitter flavour but not so much that it overpowers other flavours in a dish. A subset of endives, escarole is known as the essential ingredient in Italian Wedding Soup, escarole leaves hold up to mild cooking in dishes such as sausage and pasta.
