Puntarelle
This might be the most incredible vegetable you ever see, but also a rarity. Grown from the Catalogna Endive, these plants look like dandelion while growing, but develop thick, juicy stalks when the plants are ready to develop flowers. These bunches of stalks have a short harvest window, usually in November. You might find them at Farmers Markets and fine dining restaurants — don’t put off buying them because they won’t be around for long!
